Blender Soup

I've posted a {this moment} with Liam sampling our homemade peanut butter, but I've never really gone into detail about our blender and what we do with it.  We generally just use it for peanut butter and smoothies, but every once in a while, I get the urge to make some soup or ice cream with it.  

Tonight it was soup.  We used this recipe.  Of course, I didn't think to take a picture of it until after the first batch, so what you see is a dirty blender and some veggies.  Yes, that's a whole campari tomato in there.

We pretty much followed the recipe with a few exceptions.  We didn't use cabbage and instead of the "Blend It Up Spice Mix" we used taco seasoning.  

The other night, after making the door stop, I had about 3/4 cup of left over pinto beans, so I made a bean, chicken, rice concoction, similar to a Jambalaya without vegetables.  It was good, and we had about two cups left over.  I added the leftovers to the soup, too.

Yum.  It turned out great.  Much better than I'd expected.  The cilantro and lemon add just the right amount of flavors.  If you have a high powered blender, I highly recommend the recipe.  

Soups are really easy to throw together and are generally very healthy.  During the winter I tend to make a pot a week.  I have to remember that the blender is a great resouce for summer soups.  We did heat it up a bit more on the stove, but other than that, totally a blender meal!
